Cranberry Pecan Cookies
These Cranberry Pecan Cookies are the perfect combination of sweet and nutty. The tartness of dried cranberries complements the crunch of chopped pecans to create a delectable treat for any occasion.
Ingredients:
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dried cranberries
- 1 cup chopped pecans
Instructions:
Preheat the oven to 350F 175C
In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth
Beat in the eggs, one at a time, then stir in the vanilla
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the butter mixture and mix until just combined
Fold in the dried cranberries and chopped pecans
Drop rounded spoonfuls of dough onto ungreased baking sheets
Bake for 10-12 minutes, or until the edges are lightly golden
Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely
