Sweet Potato Gnocchi with Balsamic-Sage Brown Butter Sauce
Ingredients:
- 2 large sweet potatoes, cooked and mashed
- 1 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- Salt and pepper to taste
- 6 tablespoons unsalted butter
- 10 fresh sage leaves
- 2 tablespoons balsamic vinegar
Instructions:
In a large bowl, combine mashed sweet potatoes, flour, Parmesan cheese, beaten egg, salt, and pepper
Mix until a dough forms
Divide the dough into smaller portions and roll each portion into a rope about 1/2 inch thick
Cut the ropes into bite-sized pieces and place them on a floured baking sheet
In a large pot of boiling salted water, cook the gnocchi in batches until they float to the surface, about 2-3 minutes
Remove with a slotted spoon and set aside
In a skillet, melt the butter over medium heat
Add the sage leaves and cook until the butter starts to brown and the sage leaves are crispy, about 3-4 minutes
Remove the skillet from heat and stir in the balsamic vinegar
Add the cooked gnocchi to the skillet and toss to coat with the brown butter sauce
Serve immediately, garnished with additional Parmesan cheese and sage leaves if desired
