Vegan Garlic Scape Pesto Vanilla And Bean

A flavorful vegan twist on traditional pesto, this garlic scape pesto is infused with the delicate aroma of vanilla bean. Its creamy, tangy, and perfect for spreading on toast, tossing with pasta, or drizzling over roasted vegetables.

Ingredients:

  • 1 cup garlic scapes, chopped
  • 1/4 cup raw cashews
  • 1/4 cup nutritional yeast
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 vanilla bean, seeds scraped out

Instructions:

In a food processor, combine garlic scapes, cashews, nutritional yeast, basil leaves, lemon juice, water, salt, pepper, and vanilla bean seeds

Pulse until the mixture becomes a coarse paste, scraping down the sides as needed

Taste and adjust seasoning if necessary

Transfer the pesto to a jar or airtight container

Store in the refrigerator for up to one week
