7-Ingredient Chewy Carrot Cake Cookies
Ingredients:
- 1 cup grated carrots
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 cup raisins
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, combine the grated carrots, rolled oats, almond butter, honey, cinnamon, and vanilla extract
Mix well until all ingredients are fully incorporated
Fold in the raisins to the cookie dough mixture
Using a spoon or cookie scoop, portion out the cookie dough onto the prepared baking sheet
Flatten each cookie slightly with the back of the spoon or your fingers
Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden around the edges
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, enjoy these delicious chewy carrot cake cookies
