Merlot Braised Lamb Shanks

These Merlot braised lamb shanks are a hearty and flavorful dish, perfect for a cozy dinner. The rich Merlot wine adds depth to the tender lamb, creating a dish that is both elegant and comforting.

Ingredients:

  • 4 lamb shanks
  • 2 cups Merlot wine
  • 2 cups beef broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 2 sprigs rosemary
  • Salt and pepper to taste

Instructions:

Preheat oven to 325F 160C

Season lamb shanks with salt and pepper

Heat olive oil in a large oven-safe pot over medium-high heat

Brown lamb shanks on all sides, then remove from pot and set aside

In the same pot, saut onion, garlic, carrots, and celery until softened

Stir in tomato paste and cook for 1 minute

Return lamb shanks to the pot, add Merlot, beef broth, and rosemary

Bring to a simmer, cover, and transfer to the oven

Braise for 2 to 2 hours, or until lamb is tender

Serve hot, spooning sauce over the lamb shanks
