Spicy Chickpea Scramble
A flavorful and satisfying vegan breakfast option made with chickpeas sautéed with onions, bell peppers, and spices. This spicy chickpea scramble is packed with protein and perfect for a hearty start to your day.
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions:
Set a pan on medium heat and add the olive oil
For about three to four minutes, until the onion is clear, add the diced onion
To finish cooking, add the minced garlic and diced red bell pepper
Add the cayenne pepper, turmeric, cumin, and stir them in
Cook for one minute
Season the chickpeas with salt and pepper, then add them to the pan
Cook for 5 to 7 minutes, stirring every now and then
Take chickpeas off the heat when they are warm all the way through and starting to get crispy
Before serving, sprinkle with chopped fresh cilantro
