Homemade Hostess Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup whole milk
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 1/2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup marshmallow creme
- 1/4 cup vegetable shortening
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, and salt
Set aside
In a large mixing bowl, cream together the granulated sugar and 1/2 cup softened unsalted butter until light and fluffy
Add the egg and 1 teaspoon of vanilla extract to the sugar mixture, and beat until well combined
Alternate adding the dry ingredients and the whole milk to the wet ingredients in the large mixing bowl, beginning and ending with the dry ingredients
Mix until just combined
Stir in the semi-sweet chocolate chips
Fill each cupcake liner about 2/3 full with the cupcake batter
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool completely on a wire rack
In a small saucepan over medium heat, combine the heavy cream and 1/4 cup unsalted butter
Heat until the mixture begins to simmer, then remove from heat and add the powdered sugar and 1/2 teaspoon of vanilla extract
Stir until smooth and let it cool for a few minutes
To make the marshmallow filling, beat together the marshmallow creme and vegetable shortening until well combined
Once the cupcakes have cooled, use a piping bag to fill each one with the marshmallow filling
Pour the chocolate ganache over the top of each cupcake, allowing it to drip down the sides
Allow the ganache to set for a few minutes, then enjoy your homemade Hostess Cupcakes
