Instant Pot Burrito Bowls

A tasty and easy-to-make meal that tastes just like a regular burrito but is cooked in a slow cooker for your convenience.

Ingredients:

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 1 cup rice
  • 1 cup chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Optional toppings: avocado, sour cream, cilantro, lime wedges

Instructions:

In a skillet, cook ground beef until browned

Drain excess fat

Add diced onion and bell pepper to the skillet

Cook until softened

Transfer beef mixture to the slow cooker

Add corn, black beans, salsa, rice, chicken broth, chili powder, cumin, garlic powder, salt, and pepper

Stir to combine

Cover and cook on low for 4-6 hours or high for 2-3 hours, until rice is cooked and flavors are melded

Sprinkle shredded cheese over the top of the cooked mixture and let it melt

Serve burrito bowl mixture with optional toppings like avocado, sour cream, cilantro, and lime wedges
