Miracle Vegan Mint Chocolate Mousse Tarts

Ingredients:
- 1 cup raw cashews, soaked overnight and drained
- 1/4 cup coconut cream
- 1/4 cup maple syrup
- 1/4 cup cocoa powder
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon salt
- 1/4 cup dairy-free chocolate chips
- 1 tablespoon coconut oil
- 8 vegan tart shells
Instructions:
Soak cashews in water, then add coconut cream, maple syrup, cocoa powder, peppermint extract, and salt
Blend the mixture in a food processor until it is smooth and creamy
Mix the dairy-free chocolate chips and coconut oil until they melt
Then add them to the cashew mixture and mix them all together until they are smooth
Spread the filling out evenly in the tart shells and use a spatula to smooth the tops
Put the tarts in the fridge for at least two hours to set
Before serving, top with fresh mint leaves or grated dairy-free chocolate
