Shrimp and Pesto-Rice Salad

This Shrimp and Pesto-Rice Salad is a delicious and refreshing meal that combines the tastes of fresh basil, juicy shrimp, and salty pesto sauce. It is a great choice for a meal that is both light and filling.

Ingredients:

  • 1 cup cooked rice
  • 8 oz cooked shrimp, peeled and deveined
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons pesto sauce
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

Put the cooked rice and shrimp in a large bowl and mix them together

Put the toasted pine nuts, fresh basil, and cherry tomatoes in the bowl

Add the pesto sauce, olive oil, and lemon juice to a different small bowl and mix them together using a whisk

Add the pesto dressing to the salad and mix it all together

Add salt and pepper to the salad as needed

You can serve the Shrimp and Pesto-Rice Salad cold or room temperature
