Sweet Roasted Carrot Fries with Crispy Parmesan Cheese

Ingredients:
- 4 large carrots, peeled and cut into fries
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley for garnish
Instructions:
Warm up your grill over medium-high heat
Mix the honey, smoked paprika, salt, and pepper with the carrot fries in a bowl
Toss the fries until they are well covered
Season the carrot fries and put them on a grill basket or skewers so they cook evenly
Make sure they are all in one layer
The carrot fries should be grilled for 15 to 20 minutes, turning them over every so often, until they are soft and slightly caramelized
During the last five minutes of grilling, sprinkle the grated Parmesan cheese over the carrot fries
This will let the cheese melt and get crispy
Take the carrot fries off the grill and put them on a platter to serve
Add chopped fresh parsley as a garnish and serve right away
