Root Veg Lentil Bowl with Herb Pistou
A mix of healthy lentils and root vegetables make up this hearty vegan bowl. A tasty herb pistou sauce tops it all off. Its a healthy and filling meal that you can eat any day of the week.
Ingredients:
- 1 cup lentils
- 2 cups vegetable broth
- 2 carrots, diced
- 2 parsnips, diced
- 2 beets, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 cup mixed fresh herbs such as parsley, basil, cilantro
- 1/4 cup walnuts
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast optional
Instructions:
In a saucepan, combine lentils and vegetable broth
Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender
In a separate large skillet, heat olive oil over medium heat
Add onion and garlic, saut until softened
Add diced carrots, parsnips, and beets to the skillet
Cook for about 15-20 minutes or until vegetables are tender, stirring occasionally
Season the vegetables with salt and pepper to taste
In a food processor, combine mixed fresh herbs, walnuts, olive oil, lemon juice, and nutritional yeast if using
Pulse until a coarse paste forms
Serve the cooked lentils and root vegetables in bowls, topped with a dollop of herb pistou
