Gluten-Free Instant Pot White Bean Chicken Chili
This gluten-free Instant Pot white bean chicken chili is hearty, flavorful, and perfect for a cozy meal. Its packed with tender chicken, creamy white beans, and aromatic spices, all cooked together in a fraction of the time thanks to the Instant Pot.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 15 oz cans white beans, drained and rinsed
- 1 4 oz can diced green chilies
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1 cup frozen corn kernels
- 1/4 cup chopped fresh cilantro, for garnish
- Juice of 1 lime, for garnish
- Sliced avocado, for garnish
Instructions:
Place diced chicken, onion, garlic, white beans, green chilies, chicken broth, cumin, oregano, chili powder, paprika, salt, and pepper in the Instant Pot
Close the lid and set the valve to sealing position
Cook on high pressure for 10 minutes
Once the cooking cycle is complete, let the pressure release naturally for 10 minutes, then quick release any remaining pressure
Open the lid and stir in the frozen corn kernels
Serve hot, garnished with chopped cilantro, lime juice, and sliced avocado
