Sweet and Spicy Chicken Stir Fry
Ingredients:
- 1 lb boneless, skinless chicken breast, cut into thin strips
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sriracha sauce
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
- Sesame seeds and sliced green onions for garnish
- Cooked rice for serving
Instructions:
In a bowl, mix together soy sauce, honey, rice vinegar, and sriracha sauce to make the sauce
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat
Add the chicken strips and stir-fry until they are cooked through, about 5 minutes
Remove from the skillet and set aside
In the same skillet, add the remaining 1 tablespoon of vegetable oil
Add the minced garlic, sliced onion, and sliced bell peppers
Stir-fry for about 3-4 minutes until they are tender-crisp
Return the cooked chicken to the skillet and pour the sauce over everything
Stir to combine
Add the cornstarch-water mixture to thicken the sauce
Cook for an additional 2 minutes
Serve the Sweet and Spicy Chicken Stir Fry over cooked rice and garnish with sesame seeds and sliced green onions
