Peppermint Patty Chocolate Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 cup chopped peppermint patties about 15 mini patties
Instructions:
Preheat your oven to 350F 175C and line two baking sheets with parchment paper
In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the semisweet chocolate chips and chopped peppermint patties
Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie
Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are slightly soft
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely
