Sugar-Free Lemon Pancakes
These tasty sugar-free lemon pancakes are a guilt-free way to start the day. They are fluffy, light, and taste great with lemon without any extra sugar.
Ingredients:
- 1 cup almond flour
- 2 tablespoons coconut flour
- 2 tablespoons lemon zest
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 2 tablespoons lemon juice
- 1 tablespoon erythritol or your preferred sugar substitute
- 1/2 teaspoon vanilla extract
- Cooking spray or oil for the pan
Instructions:
In a mixing bowl, whisk together almond flour, coconut flour, lemon zest, baking powder, and salt
In another bowl, whisk together eggs, almond milk, lemon juice, erythritol, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until well combined to form the pancake batter
Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil
Pour 1/4 cup of pancake batter onto the skillet for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Repeat with the remaining batter, adding more oil to the skillet as needed
Serve the sugar-free lemon pancakes hot, garnished with fresh berries or a drizzle of sugar-free syrup if desired
